Pumpkin Pie for Diabetics

Here's what you'll need:

  • 1 9 inch pie crust -- baked
  • 2 small sugar free instant vanilla pudding
  • 2 cups milk
  • 1 cup canned pumpkin
  • 1teaspoon pumpkin pie spice
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/2 teaspoon cinnamon

Here's what to do:

  1. Blend all ingredients in blender until smooth. Use plain canned pumpkin. Do not use canned pumpkin pie mixture.
  2. Pour into pie shell and chill until ready to serve.
